Sodexo is currently seeking a General Manager 4 to oversee all of the food service operation at Pirate City in sunny Bradenton, Florida. Pirate City is the minor league home and spring training for the Pittsburgh Pirates where we have a performance fueling facilitythat serves players, administrative staff and guests their meals as well as provide catering for all functions.

Our General Manager will have full account responsibilities including managing the day-to-day food operations, financials, food production, planning and executing high quality meals, ensuring HACCP, safety and sanitation requirements are met, menu/recipe compliance and implementation, catering, HR functions including staff training and scheduling and ordering and inventory. A successful candidate have a background in Sports Nutrition and will maintain a high level of client satisfaction.

The General Manager will assist the Executive Chef in the successful operation of the culinary program for the Pittsburgh Pirates Spring Training facility through the creation of nutritionally optimal meals. The GM will work in collaboration with the Sports Dietitians to provide food that is fresh, safe, and appropriate for the needs of players and coaches. This position requires both demonstrated skill in culinary execution and understanding of culinary nutrition for athletic performance.

Meal Execution

  • Oversee the planning, preparation, and execution of breakfast, lunch, and dinner.
  • Ensure smooth functioning of foodservice operation including proper cleaning and maintenance of walk-in coolers, dry storage, and front and back of the house dining area.
  • Ensure accurate labeling, dating, and rotating (using the FIFO method) of all raw and prepared food products.
  • Coordinate meal and serving hours, so that quality, temperature, and appearance of food are preserved and food is plated on time.
  • Recognize supplies required for menus/production and ensure that supplies are obtained from storage areas in adequate time for meal production.

Menu & Recipe Development

  • Standardize production recipes to ensure consistent quality, and give feedback and input to edit them, as appropriate.
  • Ability to customize and develop recipes based on body composition goals, food allergies, athletes’ preferences, timing, and training demands.
  • Analyze production data, gather athlete feedback, and continue to expand menus to appease athlete tastes.

Food Safety

  • Provide the highest level of food safety by avoiding cross-contamination, performing appropriate sanitization, monitoring expiration dates and temperature control, and labeling all allergens.
  • Ensure that food is properly labeled, logged and discarded at the end of the “use by” date.

Inventory and Budget Management

  • Work within culinary budget, including menu costing, inventory tracking and invoice processing
  • Oversee with inventory management by quantitative forecasting, purchasing, and tracking detailed production sheets.
  • Ability to control food waste and identify opportunities for improvement of food/labor costs.

Staffing

  • Manage culinary staff, including hiring appropriate personnel, scheduling and reviewing hours, conducting regular performance reviews, and, if necessary, terminating staff in conjunction with human resources.
  • Coordinate, engage and guide culinary staff regarding menu execution, ingredient utilization, equipment operation, kitchen flow, time management, food safety and sanitization.

Qualifications:

  • Degree in culinary nutrition, culinary arts, or a related field. ACF certification preferred.
  • Experience with performance culinary nutrition with collegiate and/or professional athletes.
  • ServSafe certification
  • Experience with various cooking procedures and methods (grilling, baking, roasting, sautéing, etc.)
  • Experience is using cutting tools, cookware, and bakeware.
  • Must be knowledgeable on HACCP controls along with proper storage and use of food
  • Excellent customer service.
  • Excellent time management, organizational, and communication skills.
  • Must be able to work unconventional hours.
  • Ability to work calmly and effectively under pressure in an open kitchen environment
  • Ability and desire to work collaboratively as part of a team.
  • A positive, friendly personality with a passion for sports performance.
  • Keep a professional relationship with staff and players
  • Ability to handle confidential matters and information with discretion and diplomacy
