SUMMARY
Candidate is responsible for providing leadership support to the management team during a shift, to include but not limited to, scheduling, organizing and training staff associated with the outlets as assigned by management in a fast-paced fun environment. Duties include, but are not limited to, the following: Adjusting staffing levels according to anticipated volume, processing cash reads according to established procedures, assisting in maintaining liquor costs, accurate inventory records, proper storage of products, weekly payroll, tip reporting and records as assigned by management, supervise the assigning of specific duties to employees for efficient operation of the food and beverage outlets, supervise the clean up of food and beverage areas and proper breakdown and storage of equipment and all other duties assigned by the Food & Beverage Manager. The best candidate will have an excellent work ethic, great communication skills and a thirst for knowledge in the industry while continuing to explore and communicate suggestions within a multi-level organizations. The candidate is responsible for addressing all guest compliments and complaints and communicating those concerns to management. Candidate will provide operational relief to staff when needed while stressing quality, courtesy, and service to staff to ensure 100% guest satisfaction. Candidate must possess the ability to independently lead staff and guide guests comfortably under pressure in a fast-paced environment according to duties assigned by management. Candidate is responsible for all other duties as assigned. Candidate may be asked to perform Beverage and/or Food department supervisory duties. May issue a complimentary in accordance with the approved comp matrix.
In the absence of the Food & Beverage Manager, ensures all opening and closing duties are completed correctly and in a prompt manner. May at times assist the Food & Beverage Manager in running the upscale full-service restaurant in all aspects. Aids in the supervision of large parties to ensure guest satisfaction. Assists in cultivating and training a professional, upscale F&B service staff to provide knowledgeable, detailed and informative service to a variety of dining guests. Aids in the continuation of exploring and implementing new opportunities to grow the business, i.e. wine tastings, winemaker events, and other upscale events to be approved by upper management.

EDUCATION/EXPERIENCE
High school diploma or equivalent. One to two years supervising experience is a must. Candidate must be able to work flexible hours including weekends and holidays, daylight and evening. Must have strong knowledge of health and safety standards in a food & beverage operation.
LANGUAGE ABILITY
Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to speak effectively before groups of customers or employees of the organization.
MATH ABILITY
Ability to calculate figures and amounts such as discounts, interest commissions, proportions, percentages, area, circumference, and volume. Must have the ability to make change and follow cash handling procedures.
REASONING ABILITY
Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
COMPUTER SKILLS
Previous Point of Sale experience, preferably with Micros. Intermediate computer skills to include Microsoft Office Outlook, Excel and Word, as well as possess the willingness and ability to learn additional skills as assigned by management.
CERTIFICATES AND LICENSES
Candidate must obtain appropriate licensing as set forth by the PGCB and Presque Isle Downs.
SUPERVISORY RESPONSIBILITIES
Oversees the day-to-day supervision of the front of the house employees of the restaurant in the absence of the manager. Candidate will hold staff responsible for company and departmental policies and procedures and process appropriate documentation accordingly.

There is smoking in the casino, and therefore the employee may be exposed to cigarette smoke during egress from restaurant.
